Anticipation was the name of my first IPA. I like the name, so I decided to keep it for my run-of-the-mill “normal” IPA. The recipe has changed ocer time — the current recipe is below. What stayed constant is the composition of hops — Polaris for bittering and Cascade for flavour.
| Malt Type | Amount |
|---|---|
| Maris Otter | 5.6 kg |
| temperature | Time |
|---|---|
| 65°C | 90 minutes |
| 78°C | 5 minutes |
Lauter and sparge with 10 litres at 78°C.
Boil for 65 minutes
| Hop Type | Amount | Time |
|---|---|---|
| Polaris (18 - 23 %) | 11 g | 60 minutes before flameout (5 minutes into boil) |
| Cascade (5.5 - 9 %) | 19 g | 15 minutes before flameout (50 minutes into boil) |
| Cascade (5.5 - 9 %) | 19 g | at flameout |
Cool wort and add Wyeast 1107 German Ale to fermenter.
